I love building new holiday traditions now that I have a family of my own. We are on the healthier end of the spectrum and find that our options are sometimes limited or costly (allergic reactions) when we go to holiday gatherings.
In the name of wanting normalcy, I have been perfecting 4 yummy holiday treat recipes that are great for time at home with family and friends or to take out into the office potluck, white elephant parties and Secret Santa escapades galore.
Generally all four recipes to be debuted over the Christmas season and will be healthy, lower calorie, nutritious and tasty. Let us begin.
Holiday Treat # 3: Vegan Muddy Buddies
1C. Vegan chocolate chips
1/4C. Vegan butter
1/2C. Peanut butter
Ground Cinnamon (optional)
Ground Ginger (optional)
9C. Chex cereal
2 C. Powdered Sugar
Red & Green candy sprinkles
Add peanut butter, chocolate chips and vegan butter ( and optional spices) into a sauce pan and cook over medium heat until all ingredients are melted and consistently blended. Place your Chex cereal into a large mixing bowl and then coat with chocolate mixture. Lightly toss the cereal to evenly coat the chocolate sauce. Add all powered sugar and candy sprinkles (as much or as little as you would like) to a big ziplock bag. Next, add in your chocolate covered cereal and shake the bag until all the cereal is coated. Place your Muddy buddies on a coolie sheet to dry for an hour. Enjoy!
