I have a newfound love for smoothie bowls. I just realized that you could play with the traditional smoothie to create decadent and healthy fruit and veggie smoothies in “bowls”, no more cups man.
My family and I really love the Pina Colada Smoothie Bowl. This is an easy recipe to make with help from little ones. My little guys usually drag chairs into the kitchen and help pour all of the ingredients into the blender. This is groovy quality time fun for sure.
This recipe is definitely more on the end of the dessert spectrum because of all of the fruit and no veggies combination, but we could taste the islands with every bite!
1 Fresh pineapple or canned pineapple and juice
1 C. Almond Milk
1 Ripe Banana
1 C. Crushed ice
3/4 C. Rolled oats
1 Scoop Vegan vanilla protein powder (I use Purely Inspired brand)
1 Tsp. Vanilla extract
1 Tsp. Ground cinnamon
Unsweetened coconut flakes
Prepare mango by washing, peeling and chopping mango, set aside. Fill blender with pineapple, banana, crushed ice, protein powder, oats, cinnamon, vanilla extract and almond milk. Blend until smoothie mixture is consistent. Pour smoothie mixture into bowls, top with coconut flakes, mango, cashews and chia seeds. This recipe make 4-8 servings.
