Coco- Roons DIY Recipe: Made 3 Ways (Vegan & Paleo Coconut Macaroons) #DGIJ D29

I was strolling through the grocery store and my husband turns to me and holds up a bag of Coco- Roons, and asks “Do you know how to make these, we can make these at home right?” I read the ingredient listed and realized, heck yeah! We keep all of the ingredients at home this is going to be pretty simple!

Base Recipe:

1 C. Shredded unsweetened coconut flakes

1/2 C. Almond Flour

2-3 Tbsp. Honey or Maple Syrup

2-3 Tbsp. Coconut oil (melted)

2 Tsp. Vanilla extract

1 Pinch of salt

****I split the yielded recipe into three separate bowls to make a flavor trio. My family likes variety. 🙂


Caramel Cinnamon Flavor:

1-2 Tsp. Ground Cinnamon

1 Tbsp. Agave Caramel Sauce

Walnut Brownie Flavor:

2 Tbsp. Cocoa Powder

2-3 Tbsp. Chopped walnuts (add more if you are making a full batch)

Matcha Flavor:

1/2 Tsp. Matcha powder

* Add honey to taste *I add in an extra Tsp. of honey


Add all the ingredients in a blender or food processor until the mixture is consistent. Preheat your oven to 200 degrees. Use a parchment lined cookie sheet, layer non stick baking spray on the parchment paper. Use a spoon to mold the mixture to create little cocoroon balls. You can use a small ice cream scoop to mold the cocoroon mixture. Place all of your cocoroons on the parchment paper and bake for 20 minutes. Allow the cocoroons to dry out for 1-2 hours and then enjoy!
